Everyday we encounter people and as day pass we start to pay attention on each person and realize at some point how amazing are these inspiring creatives. Thats what happened to me.
I stumbled upon Dennice’s instagram, food by dennice, account and fell inlove with her creativity in the kitchen and as well her talent to make amazing dishes from scratch. I always admired people who create things from little resources. I am on continous search to find amazing creative individuals to feature on this blog however I would be so glad to introduce you all to this amazing instagram feed at this moment. She has mouthwatering photos that will make you hungry!
» Hi Dennice! First I would like to welcome you to this series of creative individuals. To begin with, could you please kindly tell us something about yourself?
The name is Dennice Hipolito, a boho-chic Filipina who studied Entrepreneurship in Thailand seeking for a fresh start, but ended up whipping recipes inspired by the diverse cultures around her. Simply put,I’m a person who has an intimate relationship with food since ’92. And like my Instagram page says, I’m a serial food-stalker and food-maker.
» Your instagram feed is indeed filled with food porns and most likely you are making your viewers hungry. What made you love food?
What’s not to love? Aside from the sugar-high ecstasy it gives me, the main reason would be my Nanay Lita. You see, she’s the type of grandma who will fatten you up in no time with her no-measuring-equipment-just–straight-up-instinct-homemade cooking. When I was a kid, I used to stand next to her, eyes wide open and full of wonder whenever she cooks. It seems so simple, so effortless yet always consistent in giving us delicious meal all throughout. She serves dishes that will make your mouth-water and yearn for it when you’re down and looking for some comfort. Ben & Jerry’s be damned because once you had taken a bite of that juicy chicken adobo of hers with a spoonful of rice and drizzled with her special tamarind sauce. Ugh. It is literally heaven on earth, I tell you.
» Other than taking beautiful photos of your dishes, what else do you do on your spare time?
My obsession in taking food pictures actually started when I was at Uni in Bangkok. You know those times of the year when school is testing your sanity by giving you a truckload of projects on top of those rigorous exams that will make you pull your hair out? Well, I turned to pans and stoves, saving me a trip to the nearby salon. So, while I’m whipping my next homemade ice cream, I also have my notes out for my Marketing class. I’m also a freelance photographer on the weekends, and a wannabe blogger on the side.
» Give me one ingredient you use you could never live without.
Oh, wow. That’s actually a tough question, but I have to go with limes. They just find their way in everything I cook, you know? If I want an easy pasta or salad recipe; garlic, olive oil and lime will do the trick. It just brings a splash of joy in this dreary world.
» I know this is a difficult question but give me three (3) best dishes you ever had and why?
- Nanay Lita’s Chicken Adobo (with heart and all) Plus Tamarind Sauce ComboThis is the dish I grew up in, and no matter how many meals around the world I have eaten, I still crave for that warm fuzzy feeling it gives me. It is home.
- My Mom’s Adobong Bulalo Oh, man. Just thinking about this one makes my stomach rumble. My mom makes this luscious beef shank soup that has the meat literally falling off the bone. Ugh. So tender and just melts in your mouth. This is actually a scrumptious dish on its own. But my mom doesn’t stop there. Oh no. She cooks the meat including the marrow in her adobo recipe. She said patience is needed in creating great food. And great food she always gives.
- Taiwanese Spicy Beef Noodles Would I be total loser if I said this is actually a cup noodles? I have not tried the real thing yet, but gosh. How I want to. When I was young, my aunt used to send me boxes of noodles from Taiwan and I would stuff my face until I can no longer breathe. I didn’t care if tears were literally running down my face; all I was interested in is the delectable instant goodness I had on my hands. It’s like having my own rainbow unicorn. Happy times.
» What drove you to this tasty creativeness and what is keeping you making this wonderful dishes?
It started off as a necessity. Sure, fast food is great. You don’t have to clean up afterwards and you get to treat yourself, but your bank account is deflated as a balloon covered in holes.
Then, it turned to comfort; my personal full-on carbs stress reliever. Later, I got inspired by these wonderful people who share their recipes and photos online that made me say, “hey! I want to do that too.”
You know, for me, the most satisfying feeling when you cook is seeing the people who eat your dish happy, contented. They have these stupid, goofy smiles on their faces, like you just lifted the proverbial weight on their shoulders with every bite they make. That feels freakin’ fantastic. So, I get motivated to experiment a dollop of this and a sprinkle of that. Pure bliss.
» What is the most amazing dish you ever made?
I would have to say, my Beefsteak Wrap and Roll. Not only do my followers love it, but also my cutie-patootie five-year old sister, who is the pickiest eater ever, devoured most of it. She said she’s my number 1 fan now.
» What are your tools of trade to capture all these beautiful photos?
I have my handy Nikon D5300, a sturdy tripod that goes a mile long, a customized mini tripod that I got from the dollar store, Photoshop Light Room, plus my kitchen paraphernalia and a dash of sunshine, patience and a big scoop of positive attitude. No matter how shitty my day is, making something good for myself is a sure way to kick my spirit up a notch.
